We’re thrilled to announce our next collaboration with Chef Jordy Navarra of Toyo Eatery, Manila! Chef Jordy, a Philippines native, worked in kitchens in London and Hong Kong before moving back to Manila in the hopes of creating food that resonated with the flavours he grew up with. Much like our own Chef Prateek, Navarra has since been finding new ways to present familiar and traditional Filipino flavours through bright new dishes. Toyo opened in 2016, and debuted on Asia’s 50 Best Restaurants list this year. Expect strong local influences from each chef, very peculiar cocktails courtesy Stranger & Sons, and a whole lot of funky flavours!

We’re kicking off the first of our collaborations for 2019 with a bang: Chefs Matthew Orlando (Amass, Copenhagen), Ivan Brehm (Nouri, Singapore) and Trevor Moran (formerly of Noma and The Catbird Seat) join our own Chef Prateek this month for a collaborative dinner at Masque, paired with a flight of The Malt Legends.
Between them, they hold Michelin stars, ranks on the World’s 50 Best list, critical acclaim from across the globe and a shared love for exciting, ingredient-forward cooking.

Chef Gresham Fernandes (culinary director of Impresario and man behind the St. Jude's Project) joined Chef Prateek and the Masque team on April 6 & 7 for two evenings of experimentation and collaboration. No set rules, no pretensions - just a really good time (and great tunes, courtesy our guest chef)!
In January 2018, Chefs Jonatham Tam (of Relæ) and Daniel Burns took over the Masque kitchen with Chef Prateek for a six-hand dinner in tandem with Lexus, crafting a 10 course menu infused with each one’s signature technique and philosophy, using indigenous ingredients.
