MASQUE LAB

 
 
 

The Masque Lab is a physical manifestation of a hashtag and a chef’s dream conceived in 2020; a dedicated space to break-away, research, and experiment with a whole host of seasonal ingredients and techniques that draw out the best in them. 

The 1,250 square feet lab seeks to take this ethos and explore the boundaries of those very ingredients. How do they age? How do they respond to contrasting flavours? How does one use them nose-to-tail or root-to-stem? Ultimately, how do they help bridge food cultures?  
While the Masque Lab serves the primary function of research, it has two alter egos: that of a private dining space and a freestyle kitchen. 


PRIVATE DINING
The Lab doors are open to diners who want a more intimate Masque experience. With 12 seats all centered around the kitchen,  they’ll be privy to our process and get insights into our wild experiments -- even before it trickles into the tasting menu at Masque. The dinners will create not just memorable experiences but also feed into our research! After riffing with our guests, the menus will be tailored to suit the occasion.

FREESTYLE KITCHEN 
With Masque, our dream was to make a kitchen not just worthy of curious diners, but also of incredible chefs. Our team put their heads down and did just that. With the Masque Lab, we’re doubling down on that promise. The Lab is a neat bubble for chefs to bring their ideas alive; expect frequent dinners to be announced every month, none of which will be boxed in by cuisines or expectations.
